While most of us are stuck at home during this difficult and trying time, I decided to go through some recipes I collected over time for ideas when I want to switch things up. Some are healthier than others and some provide a little comfort too. A combination of baked goods, salads, and hot meals are included in the links listed below.

I also listed a link to a site that has information about food safety questions and answers during this Covid-19 outbreak. A special thanks to first responders, nurses, doctors, those at grocery stores, restaurants, pharmacies, transportation, and ALL other essential employees keeping things going so we have access to necessities. Please stay safe!

Fresh Baked Bread. This recipe makes 2 loaves of white sandwich bread. The listed ingredients here state all-purpose flour, but I have used bread flour with excellent results. Water temperature of 110F to bloom the yeast.

Doughnut Muffins. If you’re a fan of the old fashioned donut, this recipe is spot on! And don’t be afraid to add an extra 1/4 teaspoon of nutmeg.

Chickpea Quinoa Mediterranean Salad. An excellent vegetarian and quite satisfying meal. I love this salad during the warmer weather since it’s light and packed with flavor.

Farro Salad with Cherries. If fresh cherries are not in season, you can substitute dried cherries or even dried cranberries.

Cashew Chicken. Better than take out and ready in about 30 minutes. Note: the recipe forgot to list cornstarch. After seasoning the chicken with salt and pepper, toss in cornstarch and shake off excess. You will need about 1/3 cup of cornstarch. This adds a crispness to the chicken and helps the sauce adhere to the chicken. I like to serve this with brown rice and or steamed carrots.

Kielbasa and Cabbage Skillet. I always have these ingredients on hand. I especially like using purple cabbage for this dish. Serve with pierogis, optional of course.
