Breakfast Sandwiches

These make ahead breakfast sandwiches will save you plenty of time during the week whether you’re off to work or school. They can also be frozen if you want to make extra.

6 English Muffins
6 Eggs
6 Slices Cheese, Cheddar, Swiss…
6 Slices of Canadian Bacon,12 Slices Bacon, Sausage Pattie or Ham
Salt & Pepper

Precook the bacon and or sausage patties and set aside. Toast the English muffins. To cook the eggs, I use individual silicone rings to keep the shape uniform, of course this is optional. Place the prepared silicone rings in the bottom of the nonstick frying pan.

In a small bowl, scramble the eggs, season with salt and pepper, and evenly pour the egg mixture into each silicone ring and cook. Assemble the sandwiches. Place the cooked eggs on the bottom half of the English muffin, add the cheese slices, place the bacon, or sausage on the eggs, then If you’re going to eat them right away, no need to scramble the egg, just crack it in the silicone ring, season with salt and pepper to taste and leave the yolk runny if you prefer.

If you plan on freezing, wrap each one individually in wax paper and store in the refrigerator for a couple of hours to make sure they are totally cooled down before placing them into a ziplock bag and storing in the freezer. They should be good for up to a month.

To reheat, place the sandwich in the microwave and heat for 45 seconds to 1 minute or longer.
