The Tipping Cow: Changing the flavor profile of ice cream

The Tipping Cow in Somerville is paving the way for a new ice cream experience. Owner Anna Gaul combines unique flavors with healthy ingredients to create unconventional desserts everyone will enjoy.

Gaul, graduate of Tufts and Cambridge School of Culinary Arts, always wanted to open up some sort of food business. Gaul chose ice cream because of its versatility saying, “It lends itself to experimentation which is my favorite part of any kind of cooking.” With these intentions in mind, Gaul decided to market homemade ice cream to sell in local stores and farmers market locations.

When she ran out of space to meet the demand for the ever-growing popularity of her ice cream, she decided to open up a full time ice cream location as well. In May of 2016, Tipping Cow Ice Cream opened their doors. Her ice cream flavors are regularly swapped out for a constant stream of variety. Blueberry ginger, bourbon caramel, and peach cobbler, to name a few, are some of the current options. The shop also sells cookies and brownies for those craving classic baked goods.

cow_2_webTipping Cow doesn’t just stick to regular dairy ice cream either. The shop also has vegan and nut allergy options for customers with dietary restrictions. Although not yet certified as nut-free, Tipping Cow is, “The only ice cream shop in the area to offer a safe experience for kids or adults with these allergies,” according to Gaul.

When asked what her favorite flavor is, Gaul said strawberry basil, which is sold seasonally at farmers markets and in stores. Other flavors sold in these locations include an earl grey and lemon, vanilla buttermilk, and sweet corn ice cream.

Gaul says she hopes to continue providing “fresh and interesting flavors” to the community of Somerville. With no artificial ingredients and many exciting flavors to choose from, Tipping Cow is on its way.

You can find Tipping Cow at Whole Foods Market, Medford, MA; The Spirited Gourmet, Belmont, MA; Fleck, Newton, MA; and Spindler Confections, Cambridge, MA. It can also be found at the Union Square and Watertown Farmers Markets from May to November.

Tipping Cow Ice Cream is located at 415 Medford Street, Somerville, MA 02145. They are open Tue-Sun., 11:00 a.m. – 9:00 p.m.
