Curried Tuna Salad

Here’s a quick and easy recipe that can be used to make sandwiches, spread on crackers, or add to your salad greens. Looking for a healthier alternative? Slice an English cucumber 1/4″ thick and substitute for the cracker.

1 can solid white albacore tuna in water, drained
3 Tbls. mayonnaise (or enough to just hold together)
1/4 cup finely chopped red onion
1/8 cup currants
1 tsp. curry powder, like Maharajah, or your choice
Salt and pepper to taste

In a small bowl, add the drained tuna. With a fork, break up into small pieces. Add the mayonnaise, currants, onions, curry powder, salt and pepper and blend well. Let sit in the refrigerator for at least 1/2 hour to allow the flavors to develop. For garnish, I have used slivered almonds, green onions and basil leaves.

Makes 2 sandwiches. If using crackers or cucumber slices, it’s enough for 3-4 as a snack.
