New England Lobster Rolls

It’s also the kickoff to the summer and traditions of cookouts and the gathering of friends and family. Every year at our gathering, we have steamed lobsters, corn on the cob, potato salad, mixed green salad, grilled chicken, burgers and hot dogs. As always, we pick up a couple of extra lobsters for lunch the next day to make lobster rolls.

Lobster meat from 2 – 2lb Maine lobsters
4 – hot dog rolls
Butter
3 Tbl mayonnaise
1 Tbl capers, rinsed and finely minced
2 Tbl lemon juice fresh
1/2 tsp Old Bay Seasoning(R)
1/8 tsp freshly ground black pepper
Pinch of kosher or sea salt

Roughly chop the lobster meat in about one inch pieces, set aside. In a medium bowl, add the mayonnaise, lemon juice, Old Bay Seasoning(R), capers, salt and pepper and mix all ingredients until well blended. Tastes and adjust seasoning if needed. Add the lobster meat and gently toss until all the meat is coated with the mixture and set aside. Preheat a skillet over medium heat. Butter the hot dog rolls and place in the skillet. Adjust the heat as needed. Turn over once they are browned and do the same to the other side. Evenly divide the salad between the 4 rolls and serve immediately. Serve with potato salad or better yet, your favorite potato chips.
