Vegetable Slaw

With the Fourth of July right around the corner, I thought I would share this recipe for those of you who love a good coleslaw. This is not a traditional coleslaw, but delicious all the same.

Not everyone has a food processor to shred your own cabbage or vegetables, so it is quite acceptable to use your favorite pre shredded product, I do!

This is a simple recipe that can be made in about five minutes, a huge time saver.

12 oz broccoli slaw
3/4 cup mayonnaise
1/8 cup seasoned rice vinegar
1 tablespoon sugar
1/4 tsp salt and 1/2 tsp pepper
1/2 cup dried cranberries
1/2 cup walnut pieces

In a medium bowl, add the mayonnaise, vinegar, sugar, salt and pepper and mix well. Add the remaining ingredients and gently toss until well incorporated. Place in the refrigerator for about 1/2 hour prior to serving.
